I had been given a huge bag of lemons from a friend, so little Miss 5 helped me in the kitchen baking lemon cupcakes. We tried a new recipe using thickened cream instead of butter for the mixture. The result? Yummy, melt in your mouth texture. To achieve the lemon flavour; we rind and add the juice of one lemon.

For our lemon frosting; we used buttercream by creaming together icing sugar and butter. It is better to use soft butter, if your butter is too hard then pop it in the microwave for a few seconds. We added a little bit of lemon juice to the buttercream.
Simple Lemon Cupcake Recipe
- 1 cup thickened cream
- 1 cup sugar
- 2 eggs
Whisk these ingredients together
- The rind and juice of 1 lemon
- 1 and 1/2 self rising flour
Add these to the mixture and mix until smooth
Pour into cupcake tins
I cooked mine for 15 minutes at the temperature of 180', keep checking until the tops are golden brown. This mixture makes around 16 - 18 cupcakes. Double the amount of ingredients to make double the number of cupcakes.
