Using the same recipe for the Vanilla Cupcakes with vanilla buttercream I decided to add some pink colouring to the buttercream and added some sprinkles.
I used a piping bag and nozzle to create a flower patterned topping. You can buy those disposable piping bags and plastic nozzles from any main supermarket in the baking section. I throw away the piping bags after use but keep the plastic nozzles. Very easy to do and even my little princess could do this too. Perfect pink cupcake for a children's tea party.
Using the same recipe as yesterday, I made a delicious chocolate cupcake. I changed a little bit of the recipe;
1 cup of thickened cream
1/2 cup of caster sugar and 1/2 cup of brown sugar (you can use 1 cup of brown sugar instead if you prefer)
1 and 1/4 cups of self rising flour and 1/4 cup of coca powder
As simple as that..!
I cooked it on 180' for 15 minutes.
While the cupcakes were cooking, I melted dark chocolate in a glass bowl over hot water for the chocolate glaze.
Dark chocolate around 170g into broken pieces
Melt these together and take off the heat once all has melted. The butter helps to give the chocolate a shiny glaze.

In case you're wondering about the cocoa powder. I use Nestle Baking Cocoa and you can buy them from Coles or Woolworths. They are normally in the baking section. My mother always used cocoa powder (we called it cocoa powder) in her baking to make chocolate cakes, you can reduce a few grams of flour and replace it with cocoa powder.
I had been given a huge bag of lemons from a friend, so little Miss 5 helped me in the kitchen baking lemon cupcakes. We tried a new recipe using thickened cream instead of butter for the mixture. The result? Yummy, melt in your mouth texture. To achieve the lemon flavour; we rind and add the juice of one lemon.

For our lemon frosting; we used buttercream by creaming together icing sugar and butter. It is better to use soft butter, if your butter is too hard then pop it in the microwave for a few seconds. We added a little bit of lemon juice to the buttercream.
Simple Lemon Cupcake Recipe
1 cup thickened cream
1 cup sugar
Whisk these ingredients together
The rind and juice of 1 lemon
1 and 1/2 self rising flour
Add these to the mixture and mix until smooth
Pour into cupcake tins
I cooked mine for 15 minutes at the temperature of 180', keep checking until the tops are golden brown. This mixture makes around 16 - 18 cupcakes. Double the amount of ingredients to make double the number of cupcakes.
